Street Corn Casserole

This Mexican Street Corn Casserole is baked in one dish, & ready to serve in just an hour!

What you need:

frozen corn black beans pinto beans diced tomatoes red onion instant white rice green chiles  jalapenos cotija cheese various seasonings

Prepare

Preheat oven to 375ºF. Grease a 9×13-inch casserole dish. Add all casserole ingredients & seasonings to dish & mix well.

Bake

Cover dish with tin foil and bake at 375ºF for 30 min. Remove, mix, sprinkle 1/2 cup of cotija cheese & place back in the oven uncovered for 20 minutes.

Mix

While the casserole is baking add all of the ingredients for the cheese sauce into a bowl and mix. Set aside.

Serve

Remove the casserole from the oven and let it rest for 5 minutes. Serve Mexican Street Corn Casserole with the cheese sauce.
