Mascarpone  Cake

Topped with a rich and creamy mascarpone frosting that is simply out of this world.

What you need:

all-purpose flour baking powder baking soda vegetable oil granulated sugar lemon zes fresh lemon juice vanilla extract eggs buttermilk limoncello

Mix

Preheat oven to 350℉ and prepare cake pans. Mix dry ingredients in a bowl and set aside. Mix the oil, sugar, zest, juice, and vanilla in another bowl.

Whisk

Next, whisk in the eggs, buttermilk, and limoncello. Add the dry ingredients to the wet and mix until well combined.

Bake

Split the batter between the two cake pans. Bake for 25 minutes. Prepare mascarpone frosting according to recipe.

Frost

To frost the cake, spread half the frosting on top of one cake layer. Spread ⅓ cup of lemon curd on top & add the next layer and repeat frosting and curd.
