angel hair pasta
olive oil
white onion
salt
fresh garlic
dry white wine
pasta water
lemon juice
salted butter
parmesan cheese

Boil
Cook pasta until al dente. 1. Before straining, remove 1 cup of the pasta water & set it aside. Strain pasta, rinse with warm water & set aside.

Cook
Heat a skillet. Add olive oil & onion & cook for 2-3 min. Add garlic & cook until fragrant. Deglaze the pan with white wine, add starchy water & boil.

Simmer
Let the sauce reduce for 4-5 minutes. Add the lemon juice & simmer for 1-2 more minutes. Add butter & remaining salt & stir until the butter melts.

Toss
Add half of the pasta to the skillet. Toss with the sauce. Add the rest of the pasta & toss until covered. Top with grated parmesan, pepper, parsley, and fresh lemon.
