Lemon  Cheesecake Bites

Easy no-bake, semi-homemade dessert recipe!

INGREDIENTS

LEMON PUDDING

LEMON ZEST

COOKIES

CREAM CHEESE

RASPBERRIES

MILK

STEP 1

Make Filling

In a large bowl, combine instant lemon pudding and milk.

STEP 2

Mix cream cheese

In another large bowl, mix together cream cheese with lemon zest and lemon juice.

STEP 3

Combine

Add cream cheese mixture to the lemon pudding mixture and mix until smooth.

The filling should be light yellow in color.

STEP 4

Pipe filling

Transfer lemon cheesecake filling into a piping bag and pip dollops onto shortbread cookies.

STEP 5

Top & Dust

Top each cheesecake bite with a fresh raspberry and dust with powdered sugar.
