How to Make Ricotta Cheese

Learn how to make homemade ricotta with just 4 ingredients!

STEP 1

Gather Kitchen Tools

- Cheesecloth - Colander - Bowl - Heavy Bottom Saucepan - Ladle - Wooden Spoon - Thermometer

STEP 2

Heat Ingredients

Heat whole milk, whipping cream, white vinegar, and salt until it reaches 192ºF. Turn off heat, cover, and let sit for 20 minutes. 

STEP 3

Transfer to Colander

Use a ladle to transfer whey and curd to a cheesecloth-lined colander.

STEP 4

Drain for 5-7 Minutes

Let curd drain for 5-7 minutes for a creamy ricotta cheese (great for dipping & spreading). 

STEP 5

Drain for up to 20 Minutes

Or, let curd drain for up to 20 minutes for a drier ricotta cheese (great for baking!).

STEP 5

Eat Immediately or Use for Cooking/Baking

Homemade ricotta cheese will last in the fridge for up to 7 days.
