Heat
Prepare the cheesecloth & line a colander & set aside. Pour the milk into pan and heat to 195 degrees, stirring often. Remove from heat & stir in vinegar.

Tie
Stir until curd forms. Add cold water until it reaches 115°. Then pour curds & whey into cheesecloth. Drain for 1 minute, then tie cheesecloth.

Drain
Hang from the handle of a spoon over a pot to catch whey that releases. Drain for an hour.

Serve
Remove from the cloth & place in a bowl of cool water for 2 hours. Serve immediately or store in an airtight container in the fridge.
