Homemade Ricotta Gnocchi

This ricotta gnocchi is so easy to make and can be made with homemade ricotta cheese, too!

what you need:

Ricotta Cheese Egg Yolks Parmigiano Cheese Kosher Salt All-Purpose Flour

Combine

Combine ricotta cheese, egg yolks, and parmigiano cheese in a large bowl. Make sure to drain away the excess liquid from the ricotta cheese first.

Mix

Use a wooden spoon to mix the dough together. Do not over mix or the gnocchi will come out tough. The dough should be sticky, yet hold together.

Split Dough

Dust your workspace with flour. Then, transfer the dough to your countertop and cut it into quarters using a knife or bench scraper.

Roll & Cut

Use your hands to roll each quarter of dough into a log until it reaches 3/4-inch wide. Cut each log into square pieces to create your gnocchi.

Toss

Dust gnocchi pieces with flour and then toss so that they don't stick together.

Boil

Transfer ricotta gnocchi into boiling water and let cook for 1 to 1.5 minutes or until they float to the top. This means they are fully cooked.

Mix with Sauce

Transfer the cooked gnocchi right into whatever sauce you are serving it with. Check out our sweet pea butter sauce. It's so delicious!
