Homemade Ricotta Gnocchi

What you need:
Fresh Ricotta cheese Egg yolks Parmigiano Reggiano Kosher salt All-purpose flour
Boil Water
First, add water and salt to a pot to get prep the boiling water for the gnocchi. Then, press the ricotta to remove as much moisture as possible.

Cheese Base
Next, combine the ricotta, egg yolks, Parmigiano, and salt. Whisk together until combined.

Flour
Then, add in the flour, and stir with a wooden spoon until just combined. Next, prep your work space by flouring liberally.

Shape Noodles
Using a knife, divide the dough into quarters. Then, gently roll out each quarter into ropes. Lastly, cut the ropes into 1 inch logs.

Boil
Boil the gnocchi until they float to the top of the stock pot. It should take about 1-1.5 minutes.

Serve
