Add
Add flour, butter, & salt into a large bowl. Cut the butter into the flour until crumbly. Add water & bring dough together into a ball. Make a disk, wrap & refrigerate.

Fold
Remove dough, lightly flour work surface. Roll into rectangle & fold in half 6 times. Wrap in plastic & refrigerate overnight.

Fill
Preheat oven to 400ºF. Roll dough & cut into 4 evenly sized pieces. On one side, place the diced ham & cheddar. Fold closed & pinch edges to seal.

Serve
Brush the tops with the egg wash and bake for 18-20 minutes, or until lightly golden.
