Ravioli

This goat cheese ravioli is such a delicious vegetarian meal.

What you need:

Flour Semolina flour Egg yolk Ricotta cheese Goat cheese Garlic

Make Dough

Combine flour, egg yolk, olive oil, and cold water. Pulse until a dough forms.

Roll Out Dough

Knead dough until a smooth ball has formed. Then, roll it out using a pasta roller to the #5 setting.

Mix Filling

Combine ricotta, parmesan, goat cheese, sage, garlic, and lemon. Then, pipe the filling in the center of the rolled out dough.

Cut Ravioli

Place a second piece of dough on top and press down gently. Then, cut ravioli.

Let Dry

Place raviolis on a semolina-dusted baking sheet. Then, let them dry for 30 minutes.

Cook

Bring a pot of salted water to a boil. Let ravioli cook for 2 minutes or until they float to the top.

Toss in Sauce

Toss cooked goat cheese ravioli in butter, fresh sage, salt and pepper. Enjoy this homemade pasta!
