Mix
Preheat oven. Then place the tomatoes, red onion, vinegar, salt in a bowl. Mix and set aside. Then lightly dust a counter with flour & lay out puff pastry!

Roll
Dust a rolling pin with flour & roll out puff pastry. Transfer to baking sheet & fold in edges. Score edge with a knife & poke small holes with a fork.

Mix
Brush puff pastry with egg wash & then bake for 12-15 min. Mix cream cheese, lemon zest & juice, & fresh thyme into a bowl until creamed and combined.

Serve
Remove pastry from oven & spread cream cheese mix over tart. Bake 8-10 more min. Remove & let cool. Drain liquid from tomatoes & spread over tart.
