Easy Goat Cheese Pasta

STEP 1
Add cherry tomatoes, red wine, olive oil, garlic, and green onion to a casserole dish and toss.
STEP 2
Add the star ingredient, a block of goat cheese, to the bottom of your casserole dish and bake at 400ºF for 40 min.
STEP 3
Mash softened goat cheese and cherry tomatoes and mix to form sauce. Then, add fresh spinach on top.
STEP 4
Pour in hot, starchy pasta water, mix, and then cover casserole dish to wilt the spinach.
STEP 5
Add cooked noodles and mix with the baked goat cheese pasta sauce to combine.
