Elote Corn

Why you'll love it

Corn slathered with mayo and sour cream and rolled in salty cotija cheese and cilantro.

What you need:

avocado oil corn on the cob mayo sour cream cotija cilantro chili powder cayenne pepper lime

Cook

Heat a large skillet. Add avocado oil & add the corn. Cook for 8-10 minutes turning the corn often or until the corn browns. Set aside.

Mix

Mix mayonnaise and sour cream. Set aside. Add the crumbled cotija, cilantro, chili powder, and cayenne pepper on a plate. Toss together.

Assemble

To assemble, brush each cob with the mayo and sour cream mixture. Then, roll them in the cotija cilantro mix.

Serve

Serve on a large plate with lime wedges. Enjoy as a side dish for Cinco de Mayo or a simple dinner!
