Lemon Ricotta Cookies

These lemon ricotta easter egg cookies are the perfect sweet treat to celebrate spring.

What you need:

all-purpose flour baking powder unsalted butter granulated sugar lemon zest ricotta cheese vanilla extract eggs butter milk powdered sugar

Make Dough

Add dry ingredients to a bowl. Set aside. Add wet ingredients to a mixing bowl in order listed. Cover dough & place in refrigerator for 3-4 hours.

Bake

Preheat oven & place cookie dough balls on baking sheet. Mold into an oval shape. Bake at 350ºF for 12 min. Remove from oven & allow to cool.

Glaze

Prepare glaze with an electric mixer according to recipe. Carefully dip the top of each cookie into the glaze and set it down on a cooling rack.

Decorate

Once the cookies are frosted, add Easter-colored sprinkles or use a pastel-colored food coloring to decorate the cookies like an easter egg.
