Cream of Asparagus Soup

Why you'll love it

The asparagus stalks are cooked in a savory broth and blended until silky smooth.

What you need:

olive oil yellow onion garlic vegetable broth asparagus salt ground black pepper ricotta cheese fresh lemon juice green onions fresh dill

Heat

Heat Dutch oven. Add olive oil and onion and cook for 3-4 min. Add the garlic and cook for an additional minute.

Blend

Add broth, asparagus, salt, and pepper. Bring to a boil and reduce heat to a simmer. Cook for 15 min. Use an immersion blender to blend until smooth.

Cook

Stir the ricotta cheese and lemon juice. Cook for another 5 minutes.

Serve

Add remaining olive oil to a small pan. Add the green onion to the pan and cook for 1-2 minutes. To serve, garnish with fresh dill and green onions.
