Stuffed Chicken Breast

A delicious cream cheese spinach stuffing with garlic, onion, bacon, and melty cheese.

What you need:

medium-cut bacon yellow onion  garlic cloves fresh spinach cream cheese monterey jack cheese eggs chicken breast panko crumbs grated parmesan cheese olive oil

Cook Bacon

Preheat oven to 400℉ & prepare baking sheet. Cook bacon in skillet, about 5-8 min. Remove from skillet & reserve the grease.

Transfer

In same skillet, add onion and cook for 1 min. Then, add the garlic and spinach and cook for 2-3 minutes. Transfer the spinach mixture to a large bowl.

Add

Add ingredients to spinach mixture according to recipe. Carefully cut a slit into the side of each chicken breast. Add ⅓ cup of the cream cheese mixture. Set aside.

Serve

Roll stuffed chicken in eggs & then breadcrumbs. Place on the baking sheet. Drizzle with olive oil. Bake for 30 minutes. Allow 5 minutes of rest time before serving.
