all-purpose flour
granulated sugar
salt
cold butter
egg
heavy cream
ricotta cheese
powdered sugar
ground cinnamon
mini chocolate chips
Pulse
Combine dry ingredients in food processor. Add butter & pulse until pea-sized. Add egg & wine & pulse until dough forms. Wrap in plastic & chill.

Fold
Beat cream until stiff peaks form. Add ricotta, powdered sugar, & cinnamon. Fold into whipped cream. Transfer to piping bag with large tip & place in fridge.

Cut
Heat oil. Roll out dough until 1/8 inch thick. Cut circles & wrap around cannoli ring. Fry until golden brown. Remove from rings & repeat. Place shells on wire rack to cool.

Fill
Fill the center of the shells with the ricotta filling and dip the edges into chocolate chips. Garnish with powdered sugar and enjoy immediately.
