Bake
Prepare shortbread cookie crust according to recipe. Bake at 350℉ for 10 min. Remove from oven and allow to cool for 30 min. Prepare the filling.

Beat
Beat cream cheese, sugar, & cinnamon until smooth. Add in the vanilla and mix once more. Mix in eggs one at a time until well combined. Pour into crust.

Pour
Place on baking sheet. Pour in 1 inch of hot water. Bake until edges are set & golden brown, about 55-60 min. Turn off oven, crack door, and let cool for 1 hour.

Serve
Transfer to fridge. Allow to cool for 6 hours. Pour prepared chocolate sauce over cheesecake. Top with the remaining cookie crumbs.
