Preheat oven to 425 & prepare baking sheet. Season potato wedges & bake for 20-25 minutes or until golden brown.

Cook Chili
Heat skillet over medium heat & cook beef & onion until browned. Add chili ingredients (minus beans) & bring to a boil. Add beans & let simmer for 10-15 min.

Cheese Sauce
Melt butter in small pan. Add flour & whisk until crumble forms. Add milk & whisk until mix thickens. Remove from heat & add other ingredients.

Assemble
Transfer fries to a pan, creating a pile. Top with the chili and then drizzle the cheese sauce over the chili. Garnish chili cheese fries with fresh chives.
