Chicken Quesadillas

Packed with flavor and ready to serve in 30 minutes. What’s not to love about these quesadillas?

What you need:

shredded chicken  unsalted butter all-purpose flour 2% milk pepper jack cheese avocado oil yellow onion bell peppers salsa flour tortillas

Heat

Add butter to saucepan. When melted, add flour and whisk. Cook roux for 1-2 minutes. Slowly add milk, whisking constantly until thickened.

Pour

Remove from heat. Add  pepper jack & whisk until melted. Add cumin and ½ teaspoon of salt. Pour the cheese sauce over the chicken and toss.

Sauté

Heat skillet. Add onion and sauté, then add peppers, salsa & salt. Toss until cooked. Wipe skillet clean. Add oil & tortilla. Add cheese, chicken & peppers.

Serve

Fold in half & cook until browned. Flip & cook until other side is browned. Remove from pan & top with favorite fixings. Serve!
