Shepherd's  Pie

Why you'll love it

Ground beef, creamy mixed veggies, rich mashed potatoes and sharp cheddar cheese.

What you need:

russet potatoes unsalted butter  cream cheese 2% Greek yogurt 85% ground beef yellow onion garlic clove all-purpose flour 2% milk frozen mixed vegetables cheddar cheese

Prepare

Prepare potatoes & bring water to a boil. Cook the potatoes until fork tender. Drain, add ingredients & mash until smooth. Preheat oven & prepare baking dish.

Make a Roux

Heat a skillet & cook ground beef with onion. Add seasonings. Cook for another minute. Make roux by adding flour & milk until thickened.

Mix

Add 4 oz. cream cheese and the frozen vegetables into the skillet. Mix and cook until the cream cheese is melted. Transfer to the baking dish.

Serve

Spread the mashed potatoes on top to cover. Bake for 30 mins. uncovered. Top with cheddar cheese and bake for another 15 minutes.
