all purpose flour
mascarpone cheese
whole milk ricotta
mozzarella cheese
asiago & romano
Italian seasoning
tomato paste
vodka
heavy cream
grated parmesan
Boil
Follow directions to make your tortellini. When all of the tortellini have been formed, bring water to a boil. Boil for 2-3 minutes or until the tortellini floats.

Saute
For the sauce, add the olive oil to a pan & heat. When the oil is fragrant, add onion & garlic and sprinkle with salt. Sauté for 2 to 3 minutes.

Whisk
Whisk in tomato paste & crushed red pepper. Cook for 1 to 2 min. Add the vodka and allow to cook for 4 to 5 minutes. Stirring occasionally.

Toss
Reduce the heat and whisk in the heavy cream and butter. Turn the heat off and whisk in the parmesan. Toss with tortellini.
