Cheese Soup

Why you'll love it

A classic cheese soup recipe, and it’s made completely on the stovetop.

What you need:

unsalted butter yellow onion  all purpose flour chicken broth heavy cream hot sauce shredded sharp cheddar  kosher salt cracked pepper

Make Roux

Over low/med. heat. Add 1 tbsp. of butter & yellow onion. Add remaining butter and flour to the cooked onions. Whisk for 1-2 minutes.

Whisk

Remove from heat. Slowly whisk in chicken broth and heavy cream. Whisk until all of the lumps are gone. Stir in hot sauce, salt, and cracked pepper.

Prepare

Add cheese & cook on low for 10 minutes. While the soup is simmering, prepare the croutons by tossing bread in butter mixture until toasted.

Serve

Serve the soup topped with ¼ cup of shredded cheddar and the quick croutons.
