Carrot Cake Roll

Why you'll love it

This cake roll consists of a moist carrot cake with browned pineapple and a cream cheese frosting!

What you need:

canned pineapple  unsalted butter all-purpose flour ground spices baking powder & soda eggs cane sugar vegetable oil vanilla extract shredded carrots powdered sugar  cream cheese frosting

Pineapple

Add diced pineapple to the skillet and cook slowly until it becomes a dark golden color, about 15-20 minutes. Once it is done, set aside to cool.

Wet Ingredients

Next add oil, vanilla, caramelized pineapple, and carrots to the egg mixture. Mix until combined.

Dry Ingredients

In a large bowl mix flour, salt, spices, baking powder, and baking sugar and set aside.

Bake

Combine wet ingredients and dry ingredients until just combined. Pour into a parchment lined baking sheet. Bake at 375ºF for 10-13 minutes.

Roll

Once baked through, remove from oven. Roll up the cake with a kitchen towel and let cool. Unroll and spread the cream cheese and repeat roll.
