Preheat oven to 350℉ and grease cake pan. Mix avocado oil, sugar, & brown sugar. Add vanilla extract and eggs into the bowl. Mix until well combined.

Combine
Combine flour, baking soda, baking powder, salt, cinnamon, & nutmeg. Add wet & dry ingredients. Then add shredded carrots and mix to combine.

Bake
Transfer batter to cake pan & bake for 30-40 minutes or until a toothpick comes out clean. Allow the cake to cool completely before frosting — about 2-3 hours.

Serve
Top the bars with cream cheese frosting and slice them into 12 pieces.
