Beer Cheese Soup

Why you'll love it

Beer, cheddar cheese and bacon for the most flavorful beer cheese soup you’ve ever tasted.

What you need:

thick-cut bacon onion  garlic  fresh rosemary butter all-purpose flour chicken broth beer  heavy cream sharp cheddar cheese

Cook

Cook bacon in a dutch oven until crispy. Remove bacon & place on a paper towel to drain. Leave 1 tbsp of drippings in the pan. Add onion & cook.

Stir

Stir in garlic & rosemary. Add butter & melt-- then sprinkle flour & stir until thick paste forms. Add chicken broth. Stir until lumps are gone.

Simmer

Stir in beer & heavy cream. Simmer for 5 min. so it can thicken slightly. Add cheese, stirring as you add. Stir until all cheese has melted.

Serve

Serve the soup topped with the crispy bacon bites and sliced green onions with pretzels or sourdough on the side.
