Ricotta Cheesecake

Featuring a whole milk ricotta and cream cheese filling, and a graham cracker crust.

What you need:

graham cracker crumbs unsalted butter honey ricotta cheese cream cheese granulated sugar salt eggs vanilla bean

Prepare

Prepare graham cracker crust according to recipe. While the crust is cooling, prepare the filling. Whip ricotta & cream cheese in a stand mixer.

Transfer

Add sugar, salt, eggs, and vanilla bean. Cream until well combined. Transfer filling to the crust and spread so the top is even.

Bake

Put on a baking sheet. Pour 1 inch of hot water in bottom. Bake for 1.5 hours at 325℉. Then turn oven off. Crack the oven door & allow to sit for 30 minutes.

Serve

Remove from the oven and refrigerate for at least 5 hours. Overnight is even better. Serve with raspberries & powdered sugar.
