Carrot Cake

Why you'll love it

This carrot cake is super moist, and has deliciously sweet cream cheese frosting.

What you need:

vegetable oil granulated sugar  light brown sugar eggs vanilla extract all-purpose flour ground cinnamon shredded carrots raisins cream cheese frosting chopped walnuts

Preheat

Preheat oven to 350℉. Spray 2 9-inch cake pans. Place the oil, sugar, & brown sugar into a bowl. Beat together using a hand mixer for 3-4 minutes.

Combine

Add eggs & vanilla. Mix until combined. Add dry ingredients. Fold wet & dry ingredients together. Add carrots & raisins. Divide batter between 2 pans.

Frost

When the cakes have cooled, it’s time to frost the layers. Spread or pipe more frosting along sides. Place the cake in the refrigerator for at least 10 minutes.

Serve

Take cake out of the fridge and frost with the remaining frosting. Using your hand press the candied walnuts onto bottom of cake.
