Add onion, celery, and carrots to heated oil & cook for 2-3 minutes. Add the butter, garlic, salt, pepper, & thyme. Cook for 1-2 minutes.

Simmer
Add potatoes and chicken broth. Use a wooden spoon to scrape up any brown bits. Bring to a boil, cover and reduce heat to low. Let simmer for 20 minutes.

Blend
Add the broccoli & cook uncovered on low for 10 minutes. Remove from heat. Break up the potatoes and broccoli with an immersion blender.

Heat
Place back on stove and turn heat to low. Add heavy cream & cheese. Heat until the cheese is melted, 4-5 minutes.
