Season
Pound flank steak to ¾-inch thick. Slice into thin strips & place in a bowl. Season with seasonings Massage into the steak with your hands and set aside.

Saute
Combine cilantro, onion, lime juice & vinegar. Set aside. Then saute mushrooms and set aside. Cook steak in same skillet & combine with mushrooms.

Assemble
Add the onion mixture to the mixing bowl with the steak & mushrooms & mix until combined. Assemble the quesadillas in a skillet pan.

Serve
Serve the quesadillas with a squeeze of fresh lime juice, the steak drippings as a dip or with salsa and guacamole.
