Poblano peppers stuffed with ground chorizo, pinto beans, corn, cream cheese, and more.

What you need:

poblano peppers ground chorizo  avocado oil white onion  minced garlic corn  salt cream cheese  taco sauce  monterey jack cheese

Char Peppers

Char peppers by broiling for 10 minutes - turning every few minutes. After cooled, cut in half and remove seeds & stems. Place on a baking sheet.

Cook

Preheat oven & then cook chorizo in a large skillet. Use a slotted spoon to remove from the pan & transfer to a bowl. Leave the drippings in the pan.

Cook

Heat oil. Cook onion, then add corn, garlic, & salt. Sauté until the corn begins to caramelize. Add cream cheese & taco sauce. Stir in chorizo & heated.

Bake

Add chorizo mixture to peppers, top with cheese & bake for 10 minutes or until cheese is melted. Remove & top with cilantro & red onion.
