What you need:
sweet corn taco seasoning red bell pepper red onion jalapeno pepper cilantro greek yogurt mayonnaise red wine vinegar lime queso fresco
Sauté
Heat oil in cast iron skillet, then add corn and sauté for 2-3 min. Sprinkle with seasoning & sauté a few minutes or until the corn begins to caramelize.

Toss
Remove the pan from heat & add the corn to a large bowl. Set aside! Add the red pepper, red onion, jalapeno, and fresh cilantro to the corn and toss.

Mix
Mix Greek yogurt ingredients together until combined. Add the queso fresco to the mixture and stir to combine.

Serve
Pour sauce over the corn and fold all of the ingredients together. Garnish with cilantro & salt & pepper. Serve warm or cold!
