Prepare 3 bowls. Place flour in one, whisk eggs in the other and place breadcrumbs & parmesan in another. Place mozzarella on bread.

Dredge
Season with salt & pepper to taste. Place each side of bread together. Cut each sandwich in half, creating 4 triangles. Dredge each triangle in flour, then egg.

Heat
Press the sandwich gently into the parmesan breadcrumbs, fully coating sandwich. Let rest for 10 minutes & heat oil to 350ยฐ

Serve
Fry each triangle on each side until golden brown. Transfer to a paper towel lined plate to drain. Season with salt if desired.
