Parmesan Broth Recipe

This homemade broth recipe is a rich and flavorful alternative to store-bought broth.

What you need:

salted butter white onion shallots  mushrooms whole garlic dry white wine parmesan rinds thyme & parsley water sea salt lemon juice

Cook Vegetables

Add butter to dutch oven, then add onion, shallot & mushrooms & saute until onion browns. Add garlic & saute 2-3 minutes. Deglaze with white wine.

Simmer

Add remaining ingredients (minus lemon juice), stir and bring to a boil. Turn heat to low & simmer for 4-6 hours. After, add lemon juice and stir.

Pour

Place a large bowl or pot in the sink & set a sieve on top of the pot. Pour the broth through the sieve, catching other ingredients on top.

Use the parmesan broth in soup, sauces, or risotto.
