Ricotta Layer Cake

Why you'll love it

This cake is a decadent and citrusy. It's perfect for Valentine's day or Easter!

What you need:

all-purpose flour baking powder salt unsalted butter white sugar  almond extract whole milk ricotta large eggs large lemons jar strawberry preserves lemon juice pint fresh strawberries

Batter

First, make your batter. Add all your dry ingredients and mix. In a separate bowl, beat together your wet ingredients. Then, combine.

Frosting

In a standing mixer, whip together the frosting ingredients: cream cheese, heavy cream, butter, salt, powdered sugar and vanilla.

Frost

Frost a layer of the frosting on the first cake round. Then, pipe around the outer edge of the cake round. Add the strawberry preserves in the center.

Layer

Repeat the layers 3 times. Add the top layer of cake upside down to ensure a flat surface.

Serve

Frost the outer layer of cake (if preferred) and top with fresh strawberries. Refrigerate until cool. Enjoy!
